Motivational Mondays!

Hi there friends,

Hope your weekend was fantastic! We spent the last three days looking at apartments, which was depressing and frustrating but we found one we really loved and so hopefully we hear some good news in the next day or two and can start planning our move!

Motivational Monday!

Hey friends!

So the weekend is behind me and you know what? Things already seem to be looking up. I am out of school for the day, a pot of ginger syrup is simmering beside me (filling the kitchen with the most amazing smell), and I am enjoying an afternoon tea break. These past few days have really tested my patience and I would like to think that I have emerged from this ordeal with more calmness + understanding than before.

Here are some things that have inspired me lately:

These super easy lentil burgers are perfect for weekday lunches! Since we are broke, I am always trying to think of tasty + simple ways to bring my lunch to work/school. Make a giant batch of these Sunday night, pop them in the fridge and you are set! This recipe is from Hipster Food, one of my new favorite blogs. The name always turned me off from reading but oh boy, am I happy I got over it! The blog (well, the tumblr…it is a hipster blog after all) is filled with amazing recipes + beautiful photography.

And speaking of Hipster Food, they made an online magazine! Chickpea is the cutest little vegan zine out there and I am so happy about the growing resources for vegans out in the world wide web!

This article from Cracked about horrifying lies the food industry is feeding you is a shocker. Gross.

And to add to last week’s theme of autumn foods, The Wellness Warrior posted a great recipe for a pumpkin and oatmeal cake!

And this lemon white bean dish from Veganasaurus is perfect for the chill.

And I will leave you with this beautiful cover of Arcade Fire’s song “Tunnels” by Meklit Hadero + Quinn Deveaux because I just can’t stop listening to it.
